The Balcones Rye Eclipse Cask Strength is distilled in copper pot stills and is made from rye. It then matures for at least 4 years in charred American white oak barrels. For the Eclipse, two special yeasts are used during fermentation that are normally only used for ale and single malt. In the fragrance, the Eclipse delights with fresh bread, coffee and vanilla. The taste contains notes of cinnamon, sweet vanilla and delicious spicy aromas. This rye is bottled at a cask strength of 64.0% ABV.

Scent: Soft cream caramel, vanilla and maple syrup. Accompanied by aromas of espresso, fresh rye bread and toasted oak.

Taste: Powerful and intense on the tongue. Starts fruity and with notes of toasted bread. Cinnamon, pepper and allspice are also present.

Finish: Long lasting and spicy with a mix of sweet vanilla, pepper and aniseed.
