Destemmed and gently pressed grapes are vinified according to the traditional “submerged cap” system, carefully controlled to extract delicate tannins and varietal fruit characteristics. The fermentation and maceration last 12/15 days at a controlled temperature of no more than 28°C.
The nose offers spacious and complex scents ranging from fruity suggestions of plum and cherry jam to a mild spiciness.
Smooth and full-bodied, rich in noble tannins and showing notes of cocoa, coffee and vanilla.
Great wine with roasted and grilled meat. Ideal with game dishes. Excellent with matured hard cheeses.
