We start our process with the fermentation of Pepingse wheat, barley and rye. After boiling, cooling and fermenting into a grain beer, we first distill it in our large Holstein kettle to achieve a spirit of about 60% alcohol. We then redistill it in our small high column still to 94-96% alcohol. After adding water and letting it rest for up to 6 months, we obtain the spirit that is soft and rich. The purest form of a distillate.
