Description:

Ice wine is made from overripe grapes that are harvested and pressed frozen at a temperature below -7°C. At these sub-zero temperatures, most of the water in the berries crystallizes; only the sugar in the grapes binds uncrystallized water and the fruit acids it contains. In the taste we find notes of quince, floral notes and honey. In the nose we find lychee, spices and acacia blossom. The wine has a creamy fruit fullness with a brilliant fruit acidity.
