Appelation: Henri IV's favorite wine from Burgundy was one of the Côte Chalonnaise vintage wines. Produced in the commune of Givry with its surrounding smaller villages such as Poncey, Cortiambles and Russilly, Dracy-le-Fort and Jambles. It is a little paradise for wine making. The wines that come here today have been recognized under this appellation since 1946. These vineyards surround a fortified fortress from the Middle Ages. Brown calcareous and limestone soils are the norm here. Most of the wines are exposed to the east/south-east and south. They are located at an altitude of between 140 and 280 meters above sea level.
Grape: 100% Pinot Noir
Area : 4.65 hectares
Soil type : Limestone
Vinification : 100% manual harvest without stem. Rigorous selective sorting of the grapes. Chilled for 6 to 8 days for pre-fermentation maceration, temperature regulation, barreled for 30 days. The wine is aged for 12 months. 70% is on stainless steel and 30 percent on barrel.
Storage potency : 5 to 7 years.
Tasting Notes: Ruby red in color with a very delicate fruity scent reminiscent of a basket full of red berries. Smooth with a fine tannic structure in the mouth. This is a well-balanced wine in the style you would expect from a Pinot Noir. Goes well with roasted, grilled or fried meat. Also works great with a cheese board.
