APPELLATION : The Meursault appellation, located 8 km from Beaune, has soil consisting mainly of hard Comblanchien limestone. That vein sinks into the depths at Nuits-Saint-Georges and reappears here, instead of heading south. We leave the red wines in favor of the white wine hill. This vineyard consists of 96% white and 4% red wines. The best sites are approximately 260 meters above sea level with an east-south slope. There are occasional nuances of magnesic limestone. The vineyard gets its excellent quality partly from its limestone marl. The wines are divided between the ancient Callovian limestone and Argovian marl rocks.
GRAPE VARIETY: 100% Chardonnay
SURFACE: 0.40 hectares
SOIL: Lime-rich clay
VINIFICATION: 100% harvested by hand, on arrival at the winery the grapes are pressed directly without crushing. After a slight settling, the must is immediately placed in barrels. Aged for 15 months of which 12 in barrels (10-15% new barrels).
TASTING NOTES: A golden color. The fragrance presents citrus fruit and white floral aromas evolving into notes of grilled almonds. It is smooth, very well balanced and is distinguished by its fine, long-lasting finish.
AGING POTENTIAL: 10/15 years
IDEAL TEMPERATURE: 13°C
WINE PAIRING: Finely chopped veal or poultry in white sauce, grilled and sauced shellfish such as shrimp, lobster or crayfish.
