Corbières is a mountainous area below Narbonne and Carcassonne. Long wine tradition because the Romans already shipped large quantities of wine from Narbonne. Only recently has the area started to become an important wine region in quality again. The Languedoc has changed enormously in the last twenty years from volume producer to quality producer.
The Corbières is divided into the Corbières-Maritimes, along the coast with calcareous soil, and the Hautes-Corbières, more mountainous and with rocky soil with slate. Mediterranean climate with warm to very warm summers and mild winters. The dry winds from the Pyrenees, such as the Tramontane, make this area the driest in France.
The grapes are not picked before they are optimally ripe. Then they are selected by hand, after which the whole grapes ferment naturally in a wooden tub. Some of the full and ripe fruits will burst during the process. The juice from those grapes ferments first, followed by the juice in the other grapes. This fermentation process characterizes great wines such as Château Mandirac.
The results are impressive. A beautiful intense deep purple-red colored wine with a full aroma of blackberries, blackcurrants, fennel and black pepper. The mouthfeel is harmonious and fleshy, the aftertaste is endless. Delicious with winter dishes and stews.
