Note about Il Pollenza Brut Vino Spumante
Vinification : Hand picked grapes in crates. Followed by gentle pressing without de-stealing. Fermentation in vitrified cement tanks at 14 °C. The grapes are pressed by their own weight, so only free-flowing juice is used for the wine. Second fermentation: in the spring of the following year. The wine then remains “sur lie” for at least 72 months, i.e. on the lees. 

Aldo Maria “Count” Brachetti-Peretti acquired the castle-like complex Il Pollenza in the 1970s. His family has been active in the oil and energy sector since the 1930s. Since the acquisition of Il Pollenza, major investments have been made in viticulture – until now only the best is good enough. Conte Brachetti was assisted by Giacomo Tachis, the Italian wine legend responsible for the SuperTuscan wines such as Sassiscaia, Solaia and Tignanello. Today Carlo Ferrini is the eunologist and Valerio Barbieri is responsible for viticulture.
