Tarapacá has different ways of winemaking. This series represents the inherited tradition and prestige. With respect for the grapes and the selection of the very best plots (alluvial with boulders), the pure character, finesse and balance can be obtained.
The finest Cabernet grapes from the San Jorge and San Jaime plots are harvested in mid-April. They are fermented in stainless steel vats and aged for 12 months in small French wooden barrels, then the wine is aged for another year in the bottle, in the cellars until it is matured.
Drink with: Steaks from the grill and with nice spicy farmhouse cheeses.
Tasting Notes: Stunning dark red color and aromas of ripe fruit such as strawberry, cassis and black currant. The taste is dry, very intense with a nice balance between ripe tannins and juicy fruit tones of, among other things, ripe strawberries.
Shelf life: The wines are ready to drink when they are on the market. They are then still top for 6 years, fresh with beautiful fruit.
