Tarapacá has different ways of winemaking. This series emphasizes the expressive character of the grape and its fresh fruit notes.
Fermentation takes place in stainless steel tanks (during 10 days) at a temperature between 25ºC and 28ºC in order to preserve the fruitiness and extract as much color, aroma and taste from the skins as possible. 30% of the wine is aged for 4 months in wooden barrels to get a good structure.
Drink with: Just enjoy it on its own. Also good with (Indonesian) stew or pate.
Tasting note: Ruby red wine with an aroma of fresh red fruit, black pepper and something warm like caramel. A bit spicy in the taste, slightly dried plums and Tabac. Nicely balanced, not too powerful, soft ripe tannins give the wine a little body, but do not disturb the aftertaste.
Shelf life: Ready to drink now and can be stored for about 5 years after harvest.
