The inspiration for the name of the new Single Malt came from the heart of the distillery in Kingsbarns. During the renovations of the old farmhouse that started in 2013, efforts were made to restore, rather than replace, many parts of the historic building. One was the oldest room: The Doocot.
The Doocot, Scots for Dovecot, is located at the center of the distillery in Fife and from March 2015 houses Kingsbarns' first filler cask. The space that once served as a home for the pigeons has now been turned into a home for the Kingsbarns story, but with its history still intact. DOOCOT is full of sweet, fruity character, light, intensely fruity, floral and complemented by a rich color coming from the high quality barrels in which it has matured. This new flagship single malt has been aged longer in cask, preserving balance and developing complexity.
Master Blender Isabella Wemyss carefully selected a combination of Ex-Bourbon and STR (shaved, toasted and re-charred) ex-Portuguese red wine casks to mature DOOCOT.
Nose : Sweet and floral, soft brown sugar with banana cake batter and tropical notes.
Taste : Pineapple syrup, summer berries and a hint of rhubarb.
Finish : Kiwi fruit and citrus zest.
Kingsbarns was opened in 2014 by the Wemyss Family, who have been in the drinks industry for many years. They are best known as an independent bottler in the whiskey world. The distillery is built in a derelict historic farmhouse in the area where many Scottish grains are grown, the Kingdom of Fife.
