Kapistoni! That was the exclamation of Niko Khokhishvili's grandfather when he got a really good wine in his glass. And he should know, because grandfather was a winemaker by profession. Niko has wanted to become one all his life: a winemaker. And he also found his calling in a roundabout way. Niko emigrated to the United States with his parents in 1993 as an adolescent. He went to high school there and then to the Military University. He became an American citizen and a career soldier in the United States Army.

Yet the blood creeps where it cannot go. In 2010 Niko returned to his homeland. He started making wine in his country house not far from the capital Tbilisi. There were still old qvevris buried in the basement. And study a lot. A lot of studying. For although almost every man in Georgia makes wine; Making really good wine every year is really a profession.
