The azienda agricola Tenimenti Civa is located on the eastern hills of Friuli, in Bellazoia di Povoletto, in the province of Udine. In this strip of land, in Ravosa, Manzano and San Giovanni al Natisone, we are carrying out an ambitious production project dedicated to indigenous grapes: Ribolla Gialla – the flagship -, Friulano (formerly Tocai), Refosco dal peduncolo rosso and Schioppettino. They also grow Sauvignon, Pinot Grigio, Chardonnay, Glera, Cabernet and Merlot.
Vinification : After a soft pressing, fermentation starts in stainless steel vats, then refermentation takes place in an Autoclave at a controlled temperature of 16°-18°
Tasting note: Light lemon color, with persistent and fine perlage (quality and character of the bubble). Floral and fruity on the nose. Citrus notes are followed by notes of barley, bread, dried fruit and roasted almonds. This bubble is harmonious and beautifully balanced and the aftertaste contains a pleasant minerality.
Jan Peek's tasting note for the Civa Spumante Blanc de Blancs Extra Dry
Color – Straw yellow with golden sparkles
Scent – Fruity and floral aromas of apple, pear and citrus fruit
Taste – Full fruity glass, with a soft mousse
This is a bubble that won't get boring; delicious fruit, nice and fresh and a nice soft bubble, which is dangerously easy to drink.
Wine-food combination: This dry and fruity wine is very versatile and therefore a perfect companion for an aperitif and various antipasti. Suitable with raw crustaceans and molluscs, ham and melon, in fact all starters and fish dishes. It is a must to try the Civa Spumante Blanc de Blancs Extra Dry with fried vegetables and a fish carpaccio.
