Founded in 2014 by renowned winemakers Giorgi Tsirghvava and Mamuka Tsiklauri, DoReMi Wine Cellar pays homage to Georgia’s rich winemaking heritage. With an unwavering commitment to organic practices, they carefully select grapes from vineyards spread across the diverse landscapes of Kakheti, Kartli and Imereti.
At DoReMi, tradition is key, with each wine carefully crafted using the age-old kvevri winemaking method. These large clay vats, hidden deep in the cellar, are the heart of their winemaking process. No additives are added, and there is no intervention in filtration or clarification, except for the minimal addition of sulphites. Each region in Georgia has its own unique customs for producing natural wines in a kvevri, such as fermenting grapes in Kakheti together with the skins, and sometimes even the ripe stems. On the other hand, winemakers in the eastern region of Kartli often choose to use only a portion of the grape skins and leave the stems unfermented at all.
