Sulphur dioxide and sorbic acid are added to make the wine last longer and stable.

The grapes for this wine are carefully harvested by hand and selected for their perfect ripeness to ensure optimum flavour. After manual destemming and crushing, the grapes are fermented at a controlled temperature of 26°C, allowing the natural aromas to fully develop. After fermentation, the grapes are gently pressed using a pneumatic press, ensuring pure juice extraction while preserving the delicate plum notes. The wine then undergoes cold stabilisation at -3°C to avoid tartar crystals, which contributes to the clarity and stability of the wine. The process is completed with tangential filtration and strict microbiological controls to ensure the highest quality and safety standards before bottling.
