Immediately upon pouring it is clear, this is a dark, rich whisky. The whiskey has the typical notes that you expect from a whiskey that has matured for 22 years in an old Oloroso sherry barrel. Despite the aging in sherry casks, the first impression of the whiskey is fresh rather than sweet, but if you give it a little time, the whiskey shows its true balanced and complex character. The unique qualities of this whiskey come from the use of a crystal clear wort that ferments coolly and slowly before being quietly distilled with an early cut point at the end of the middle barrel. After distillation, this whiskey was fully matured in Oloroso sherry casks. The aging in these barrels gives the whiskey its beautiful color and enhances the elegant rich sweet tones and depth.

Tasting Notes :

Smell: The first thing you notice is how elegant and fresh the whiskey sparkles in the glass despite its respectable age. With time in the glass character develops characterized by fresh citrus fruit mainly lemon this balances nicely with the very complex notes of chocolate and a hint of Oloroso sherry. Our standard aging method of maturing the whiskey in the same cask for its entire life clearly adds to the great complexity of this whiskey without adding an excessive amount of sherry, rather a delicate complexity with dark chocolate and aged leather.

Taste: Wonderfully balanced. Dry notes of oranges and other citrus flavors balanced with the deep and interesting notes of aged leather and a chocolate-rich, warm quality of dried fruit.
