Vineyard and terroir – Saint Roch Rose AOP Côtes de Provence
The vineyard is located in the golden triangle (Cuers, Puget Ville and Pierrefeu), this triangle recognized as one of the best soils for growing wines from the Côtes de Provence.
It is a stony soil with a red argilo-sandy matrix on which grapes grow until they are perfectly ripe to achieve a nice balance in the wine.
The grapes are grown using agricultural methods that respect the environment. The Mediterranean climate washed over by the Mistral does not create high phytosanitary climate pressure, limiting the number of treatments.
Vinification
The grapes are picked exclusively at night between 4:00 AM and 9:00 AM to preserve their full aromatic potential. The grounds are checked once a week to ensure the grapes are picked when they are perfectly ripe.
Rosé: direct pressing of the grapes in an oxygen-free environment, fermentation at low temperatures and subsequent maturation on fine lees ensure a full flavor and complex notes.
The Maîtres Vignerons from Saint-Tropez carry out the final treatments to stabilize the wine before bottling it. This last step is carried out under optimal conditions with the latest generation of technical equipment to maintain the best possible wine quality.
