This whiskey comes from as the name suggests, the Sierra Norte Mountains of Oaxaca, Mexico. This beautiful area with abundant flora and fauna is one of the world's most treasured places in terms of biodiversity. The base of this whiskey, corn, has been cultivated here for thousands of years by the local population. Master distiller Douglas French uses his passion for the different varieties of local corn from Oaxaca to produce unique whiskeys. He therefore works closely with the local farmers who grow and harvest the maize in the traditional way.
The Sierra Norte Black Corn whiskey is made from black corn. This type of corn, native to the Oaxaca area, has a sugar level three as high as regular corn. This makes it ideal for making alcohol. The total composition of the whiskey is made of 85% black corn and 15% malted barley. After distillation, the whiskey is aged for approximately 10 months in French oak barrels before being bottled.
This whiskey is rich in aroma and taste. Funky notes of overripe banana and plantains are combined with coffee and salted caramel. It has some minor similarities with the deep flavor you get from mezcal. The aftertaste is soft with light flavors from the oak on which it is aged.
