Climate – the 2021-2022 season had a fairly dry winter, while spring and summer were warm with almost no rainfall, so both flowering and fruit set were affected. Spring frosts were absent. Bud break occurred on similar dates to last year, while flowering and fruit set occurred 7 to 10 days earlier. The health of the grapes throughout the season was good. In terms of temperature analysis, the average minimum temperatures were fairly in line with a normal year (12°C) and the average maximum temperatures were higher this season (28°C), as was the thermal amplification (17°C). In addition, there were consistently more days above 25°C during the summer months in each month of the season, and especially in February and March when the grapes were at their peak. Finally, the wines, especially in terms of aromatic profile, were of good intensity and with a good dose of spicy notes, such as dill, quillay leaf, pepper and cloves.
Vinification of Tarapacá Gran Reserva 150 Anniversary Red Blend – The grapes were harvested by hand in the morning. The harvest began on March 7th with the Cabernet Franc, followed by the Cabernet Sauvignon on March 17th and finally the Syrah on April 7th. Once in the winery, each variety was selected and destemmed separately. The pre-fermentation maceration at 10°C was carried out for 3 to 4 days to achieve greater aromatic intensity and a more stable color. Then the alcoholic fermentation took place, which lasted between 8 and 10 days at a temperature of around 26°C for Syrah and 28°C for Syrah. Cabernet Sauvignon and Cabernet Franc. During the alcoholic fermentation, gentle extraction pumpovers were carried out, one every 8 hours for 20 minutes. After alcoholic fermentation was complete, 20% of the wine was transferred to 3,500-liter French foudres, and the remaining 80% was sent to French barrels, 15% new and 85% used, all with a capacity of 300 liters. This marked the beginning of the maturation process and malolactic fermentation. The final aging lasted for 14 months. Then the final blend was made and bottled. The wine matured in the bottle for four months before being released on the market.
