Tarapacá has different ways of winemaking. In this series the wines are concentrated and powerful and the characteristics of the grape are supported with a beautiful integrated wood touch. The exception to this is this Sauvignon Blanc. The grapes for this wine come from Casablanca Valley, they are so concentrated and of top quality that they opt for fresh vinification on stainless steel.
However, 10% comes from the Maipo Valley and gives the wine a hint of cassis, grapefruit and a thick mouthfeel
To retain as many fresh aromas as possible, they are harvested at night.
About 70% have skin contact for 5 hours, which enhances the aromas. Dry ice and an inert environment are used for this so that minimal oxidation takes place.
After fermentation, the wine is still on the fine lees, also to improve the mouthfeel. All these choices create a full, elegant white wine with "Body" but above all freshness. In Chile this has been the best-selling white wine from Tarapacá for many years.
Drink with: Hors-d'oeuvre, hot or cold dishes. Or as a spicy aperitif.
Tasting note: Light yellow wine with a fresh aroma and a dusty bouquet. with lots of fruit like mandarin and peach. Elegant wine with firm taste and invigorating freshness.
Shelf life: Now drinkable and now the tastiest. Drink within two years, come back soon for the new vintage.
