Tarapacá has different ways of winemaking. This series emphasizes the expressive character of the grape and its fresh fruit notes.
This grape is the forgotten grape from Bordeaux but rediscovered in Chile. The most exciting grape for the Maipo Valley with a somewhat variable character. Sometimes a little more fruit and another year some paprika and pepper.
The winemaker has added some Cabernet Sauvignon to balance the tannins nicely.
Fermentation takes place in stainless steel tanks (during 10 days) at a temperature between 25ºC and 28ºC in order to preserve the fruitiness and extract as much color, aroma and taste from the skins as possible. 40% of the wine is aged in wooden barrels for several months to get a good structure.
Drink with: Just enjoy it on its own. Also good with (Indonesian) stew or pate.
Tasting Notes: Dark red wine with purple notes. Intense fragrance with Tabac, coffee but also raspberry. Nicely round in the taste, some spicy, roasted nuts and tones of chocolate. Nicely balanced, not too powerful. Soft ripe tannins give the wine a little body but do not disturb the aftertaste.
Shelf life: Ready to drink now and can be stored for about 5 years after harvest.
