Region: Puglia is the southern Italian wine region and forms the 'heel of the Italian boot'. This area is under the influence of the Adriatic Sea. It is a fertile region, but it is also warm and dry.

Details/comments: Paralupi is an appassimento wine. After reaching full ripeness, the grapes are left on the vine for approximately 3 weeks. This causes the grapes to dry slightly and the juice becomes more concentrated and produces a sultrier and richer wine.

Tasting notes: Rich aroma of ripened dark fruit, jam, slightly vanilla and chocolate. The taste is full but velvety, some spices and mild tannin.

Serving suggestions: With rich spicy dishes, game and matured hard cheeses.
