The young Russian Alexey Sapsay left for Armenia after his studies to become the winemaker at Voskevaz Winery. There he rediscovered the Karas (Qvevri in Georgian): large earthenware amphorae in which the Armenians, like the Georgians, traditionally make wine. The Karas is buried in the cellar of the winery. The grapes go in with their seeds and skins to ferment. During the communist period, the Karas had become redundant, because quantity and no longer quality was required. Alexey found some very old Karas at the winery and from small farmers in the area. He had them cleaned and has been making wine in them since 2015. Although a small quantity, it is expected that the production of Karas wines at Voskevaz will increase significantly in the coming years.
