Vintage 2021 Sea Aged (Attention!!! delivered without label, see 2nd photo)
Vuurzee was born from the desire to do things differently. After a search outside the beaten track and many experiments later, Vuurzee was born: elegant and award-winning. Createdfor the true connoisseur. A worthy alternative to (sparkling) wines. A drink of this level naturally deserves an eye-catching coat. The special design of our bottle is inspired by the Champagne bottle. The bottle is fully coated, to maintain the high quality of Vuurzee.
We have deliberately chosen to replace a large part of the bitters that come from hops with other bitters, namely from the Pinot Noir grape. The Pinot Noir grape has a light tannin because of its thin skin. Our grapes are grown on our own vineyard called Zonnestraal in Loosdrecht. In addition, these tannins ensure that the bitterness, which often occurs in beers, is better balanced. Partly for this reason, Vuurzee lends itself so well to culinary dishes.
The champagne yeast gives Vuurzee a slightly lactic character. In other words, a slightly sour taste. The yeast also provides a pleasant mousse and texture in the mouth. In contrast to beer yeast, the champagne yeast ensures that you do not feel bloated
table sits.
Vuurzee is high fermented and each bottle is given 3 to 4 months to mature. The intention is for the coarse bubbles to become much finer, like with Champagne. In addition, the yeast on the bottle ensures that Vuurzee continues to evolve in taste and ensures that you can store it for a longer period of time. Just like a good wine! The yeast makes Vuurzee slightly less hard, softer in taste and ensures less sharp tones. The last glass becomes cloudy as a result. We continue to experiment with the taste of Vuurzee. Not only do we let Vuurzee mature in oak barrels. Last summer we also let a number of bottles mature for 6 months in the Oosterschelde.
The drinking temperature of Vuurzee is around 8 degrees and is best enjoyed in a wine glass or open flute. Vuurzee is perfect to serve before dinner, as an aperitif or with an amuse. During dinner, Vuurzee lends itself as a full partner to the most diverse beautiful dishes. And delicacies such as caviar, oysters, langoustines, scallops and smoked salmon to foie gras, smoked wagyu and Ibérico ham.
